This course offered by Suffolk County is available to members of the food service industry, farmers, and the general public. Students who successfully complete the course are issued a certificate that lasts for three years. The Food Manager's Course Manual and examination are available in both English and Spanish. All food service operations, including temporary establishments, that are located in Suffolk County are required to have a currently certified individual on their premises during all hours of operation.
This all day course will provide in depth information on Suffolk County guidelines regarding temperature control, foodborne illnesses, and proper pH. It will also cover equipment, hygiene, and facility maintenance, including for catering and pop up events.

Come prepared to earn your chops and cook your way through a Chef’s tasting menu with curated local ingredients. This class will cover fundamental kitchen skills for the food entrepreneur and home chef. Curreri will guide us through setting up your cooking station (Mise-en-place), knife skills, and prepping your components. In this workshop Curreri, a trained pastry Chef and proprietor of Robert’s Bakestand, will introduce us to pastry technique and working with different types of dough.This is the third session of a three part series. You’ll work side by side with Farm Manager Layton Guenther to plant a variety of seeds in the trays destined for the greenhouse, and learn about the importance of making and using compost. The Joshua Levine Memorial Foundation and Slow Food East End will host “A Moveable Feast”, an evening of celebration, honoring Joshua Levine and supporting the School Garden Project on the East End. As a result of this event, the East End of Long Island has grown into one of the largest, most successful school garden programs in the United States, 30 schools in all!
“A Moveable Feast” not only celebrates the legacy of Joshua Levine and supports School Gardens, but it is the kick-off of the spring season and the waking up of the earth and our community after a long winter. Everyone is ready for a great party with exceptional food and drink, along with music that will get you up on your feet. Year after year, the best chefs, food, and beverage purveyors on the East End have gladly participated in “A Moveable Feast” as supporters of Slow Food and its mission.

A true seed-to-plate experience! Our STEM-based culinary curriculum will take kids around the world and into the local community. Hands-on classes will hone culinary literacy, while field trips to local producers, farms, restaurants, and markets will provide experiential learning in everything food-related. During class, students will make their own daily lunch and snack, and will culminate in a family showcase where students show off their new culinary skills! This program is a collaboration between NYC-based Allergic to Salad and the Amagansett Food Institute.
