Suffolk County Food Manager's Certificate Course

On Thursday, May 31st, AFI will hold a Suffolk County Food Manger’s Course at South Fork Kitchens. The class will run from 8 a.m. until 5 p.m. A test will be given at the end of the day. Test results and certificates will be mailed shortly after the course date. The food manager’s certificate is valid for three years.

Coffee and water will be served in the morning, but participants should provide their own lunch. They should also have the following:

- a check, money order, or cash for the instructor
- a valid photo ID
- pen and paper

The fee is $150 for AFI members and their employees, and $175 for non-members.
Non members should send a $25 deposit to AFI to hold their space. Please pay online through our Square system (https://squareup.com/store/south-fork-kitchens-cafe) or mail a check or cash to AFI at South Fork Kitchens, 239 Montauk Highway, Southampton, NY 11968 (or feel free to email info@amagansettfoodinstitute.org if you prefer to drop it off at the kitchen). Join renowned musician and scholar Jeff Davis as he discusses the rich history of fiddle tunes and barn dances on the East End of Long Island and hear tunes he only recently discovered in local archives, including tunes like “Setauket,” “Stony Brook,” “Gardiner’s Waltz,” and even the “Cricket Sett.” The talk will be followed by a potluck dinner and dance. This event is $10, and free for farmers, but RSVP is required. Please bring a potluck dish (and serving utensils) with enough to share for six or more people, along with a beverage.

Hall will guide this hands-on class where participants will learn the culinary and medicinal uses of these herbs, as well as the process of drying and macerating local herbs for teas, oils, and tinctures. This course will include a walk through the beautiful herb garden (weather permitting). Participants will receive a free bunch of herbs from the farm and a variety of recipes. Beginners are welcome. A celebration of Spring in Spain, calçots are a type of green onions that are grown for the purpose of eating local Spanish festivities called “calçotada”. They are roasted over open flames and eaten by hand accompanied with Romesco sauce and red wine. This meal will be accompanied by seasonal tapas (small bites and plates) highlighting the start of Summer. Head winemaker of Palmer Vineyards will be pouring and discussing a variety of beautiful wines that pair perfectly with the traditional Spanish menu. Join the Great Food Truck Derby for its annual caravan of Long Island food trucks parked amidst potato fields at the Hayground School, alongside New York wine and beer and non-alcoholic drink offerings. Ticket price includes one serving at every food truck and three drinks for adults, and four truck tastes and one drink for children.
